Fruits de la mere
INGREDIENTS FOR ONE PERSON:
- 5-7 oysters of various types
- 6 clams
- handful of winkles ( in French they are called bigorneaux)
- 3 langoustines ( or jumbo shrimp or other shrimp)
- stone crab or spider crab
- mayonnaise
- vinegar with chopped shallots
- lemon
- salted butter
- wheat or other dark bread
PREPARATION:
The oysters and clams are served raw and chilled. Open just before serving.
The winkles are rinsed in cold, running water. Then they are placed in a large saucepan, covered with salted water and brought to a boil, removed from the fire and allowed to steep in the water for 2 minutes before being drained.
The langoustines are served boiled or steamed and cold.
The crabs are also served boiled and cold.
To serve:
They are usually served on double or triple-tiered platters.
The platters are covered with seaweed and the seafood is then arranged on the various tiers and accompanied with shallot vinegar and garlic or lemon mayonnaise or a classic aioli
